For Navratri fasting, I wanted to make something that would be filling and enjoyed by everyone, so I made these potato sabudana cutlets. I added a little roasted peanuts for extra flavor, which makes them taste even better. These are very delicious to eat.

Ingredients

Serves 4 servings
  1. 3large boiled potatoes
  2. 2 tablespoonssoaked tapioca pearls (sabudana)
  3. 1small piece ginger, grated
  4. 6-8green chilies, finely chopped
  5. 1 tablespooncilantro, finely chopped
  6. 1 tablespoonroasted peanuts
  7. 1 cupoil suitable for fasting or ghee
  8. 2 teaspoonssendha namak (rock salt) or to taste
  9. 1 teaspoonroasted cumin powder
  10. 1/2 teaspoonblack pepper powder

Steps

    Wash the potatoes thoroughly, cut them in half, and boil them in a pressure cooker. Soak the tapioca pearls for 20 minutes. Once the potatoes are cooked, turn off the heat, let them cool slightly, peel, and mash them. Drain the soaked tapioca pearls well and add them to the mashed potatoes. Mix well.

    Add grated ginger and finely chopped green chilies. Add chopped cilantro, roasted peanuts, salt, cumin powder, and black pepper powder. Mix everything together thoroughly.

    Grease your hands with ghee and shape the mixture into round cutlets. Heat ghee in a pan, then add the cutlets and shallow fry until golden and crispy.

    Fry all the cutlets in the same way. Your crispy and tasty potato sabudana cutlets for Navratri fasting are ready. Place them on a serving plate and serve.
