Tired of those famous bubbles in your flan? Pay attention. In a bowl, combine the eggs and sugar and stir gently with a wooden spoon (stir, don't beat—this is the secret to a smooth flan without holes, as beating adds air).

Pour the milk over the eggs, stirring quickly with the spoon.

Coat the flan mold—or, as I do, individual molds—with caramel, then pour the mixture through a strainer to remove any egg strands.

Place the molds in the microwave and cook for 4 minutes on high power (mine is 900 watts). That's it!

Leave the flan in the microwave until it starts to bubble, then remove it. It may look liquid, but it will finish setting in the refrigerator as it cools, so don't worry.
