Easy potato salad
This is a simplified version of my dad's recipe.

Make sure you have all the ingredients before you begin. Not pictured are the spices: you may arrange them as you like.

Peel and dice the potatoes and carrot.

Start boiling the chopped carrot first - it will take some time to be soft. It's hard to overdo this one, so give it time.

Boil the diced potatoes in salted water until they are soft, but not powdery. You may check the softness with a fork from time to time.

As the potatoes and carrots are boiling, hard-boil the eggs for 6 minutes. Cool them down and peel them.

Remember to check on the potatoes and carrot!

Put the eggs, potatoes and carrot in one bowl. You may use an egg dicer. I enjoy breaking them as I mix the salad.

Add the mayo, mustard and spices as you mix. Cumin and pepper is my recommendation. Be sure to check the flavor.

You may want to decorate the salad before serving. I like parsley, but cherry tomatoes work too. Or both! Have fun making it into the color and shape you like!
