Heat ghee on low. Add jowar flour and roast gently until aromatic, keeping the color light.

In another pan, dissolve sugar in water to make a thin syrup.

Add syrup to roasted flour, stirring to avoid lumps.

Cook on low until the mixture thickens and leaves the pan sides.

Mix in cardamom, nutmeg, almond powder, walnuts, and saffron.

Spread in a greased tray, garnish with pistachios, cool, and cut into pieces.
Tips
For peak summer (May–June), enjoy slightly chilled (not fridge-cold) with a glass of chaas (buttermilk) or nimbu pani.
