  9. 4Green Chilies, deseeded & finely chopped
  10. 3small sprigs Curry Leaves, finely chopped
  11. 1/2 tspAsafoetida
  12. 1/2 tspFennel Seeds (Saunf)
  13. 1/4 tspAjwain
  14. 1/4 tspSugar
  15. 1/2 tspTurmeric Powder
  16. 1/2 tspRoasted Coriander Powder
  17. 1/2 tspSpicy Red Chili Powder
  18. 1 bundleFresh Methi Leaves, chopped
  19. 1/4 cupfreshly chopped Coriander Leaves
  20. 1/4 tspEno Fruit Salt (Lemon Flavor) or Baking Soda
  21. juice of ½ LemonLemon Juice
  22. For Making Methi Gota in Appe Pan:
  23. as requiredOlive Oil
  24. 1 tbspSesame Seeds (Optional)
  25. For Green Chutney:
  26. 2 clovesGarlic
  27. 2Shallots
  28. 1 tspCumin Seeds
  29. 8–10 whole Black Peppercorns
  30. 4Green Chilies
  31. 2small sprigs Curry Leaves
  32. 2Ice Cubes
  33. 1 bundleCoriander Leaves
  34. 1 tbspLemon Juice
  35. 12Almonds, blanched
  36. Salt to taste
  37. 1/4 tspBlack Salt

    ▪︎ In a large mixing bowl, combine besan, sooji, salt and water. Whisk into a smooth thick batter and let it rest for 15 minutes.

    ▪︎ After resting, mix the batter once again. Add ginger, garlic, green chilies, curry leaves, asafoetida, saunf, ajwain, sugar, turmeric powder, coriander powder and red chili powder. Mix well.

    ▪︎ Add chopped methi leaves and coriander leaves. Mix until everything is well combined.

    ▪︎ Add eno fruit salt and lemon juice. Mix quickly and gently. The batter should have a thick dropping consistency.

    ▪︎ Heat the appe pan and grease each cavity with a few drops of olive oil. Sprinkle sesame seeds if using.

    ▪︎ Pour spoonfuls of batter into each cavity. Cover and cook for 6–8 minutes until the underside turns golden and crisp.

    ▪︎ Add a drop of olive oil on top of each appe and flip gently. Cover again and cook for another 6 minutes.

Tips

• Resting the batter helps the sooji absorb moisture and gives softer gotas.

• Do not overmix after adding eno, or the gotas may turn dense.

• Cook on low to medium heat for even cooking and crisp texture.
