▪︎ In a large mixing bowl, combine besan, sooji, salt and water. Whisk into a smooth thick batter and let it rest for 15 minutes.

▪︎ After resting, mix the batter once again. Add ginger, garlic, green chilies, curry leaves, asafoetida, saunf, ajwain, sugar, turmeric powder, coriander powder and red chili powder. Mix well.

▪︎ Add chopped methi leaves and coriander leaves. Mix until everything is well combined.

▪︎ Add eno fruit salt and lemon juice. Mix quickly and gently. The batter should have a thick dropping consistency.

▪︎ Heat the appe pan and grease each cavity with a few drops of olive oil. Sprinkle sesame seeds if using.

▪︎ Pour spoonfuls of batter into each cavity. Cover and cook for 6–8 minutes until the underside turns golden and crisp.

▪︎ Add a drop of olive oil on top of each appe and flip gently. Cover again and cook for another 6 minutes.

▪︎ Blend all the green chutney ingredients into a smooth chutney. Adjust seasoning as needed.
