Ingredients

  • 3/4 cupall-purpose flour
  • 2 tablespoonscricket powder
  • 1 3/4 teaspoonsbaking powder
  • 1/4 teaspoonsalt
  • 1/2 tablespoonbrown sugar
  • 1/2 cup plus 2 tablespoonsmilk
  • 1/2large egg
  • 1 1/2 tablespoonsmelted unsalted butter
  • Icing sugar and fresh berries, or syrup on top (optional)

    Mix dry ingredients: Whisk the flour, cricket powder, baking powder, salt, and brown sugar together in a large bowl.

  2. 2

    Form a well: Create a small valley in the center of your dry mixture.

  3. 3

    Add wet ingredients: Pour in the milk, half-egg, and melted butter. Stir until you get a smooth batter.

  4. 4

    Heat the pan: Set a griddle or frying pan to medium-high heat. Lightly coat it with oil or butter.

  5. 5

    Cook: Pour 1/4 cup scoops of batter onto the hot surface. Flip once bubbles form and the bottom turns light brown. Cook until both sides achieve a golden-brown finish.

  6. 6

    Serve: Top immediately with your choice of berries, powdered sugar, or syrup
