A family recipe for mixed meat burritos with skirt steak and chicken.

Dice the steak and chicken, then sauté with mustard and seasonings.

Once the meat is sautéed, add the onion, chile, garlic, and cilantro. Let the vegetables get crispy but not too soft, then turn off the heat and let rest. Repeat the same process with the chicken.

When both the chicken and steak are ready, prepare the chimol (chirimol) separately: blend the jalapeños, juice of one lime, two sprigs of cilantro, two cloves of garlic, and add 1/4 cup oil (60 ml) while blending.

This will be your spicy green sauce.

Now assemble the burrito with all the ingredients.

Top with a layer of mozzarella cheese.
