Mix all ingredients for the meatballs in a large mixing bowl. Mix well, but don't overmix. Refrigerate at least 20 minutes.

Form mixture into 8 meatballs. Place meatballs in a large frying pan. Fry over medium heat until browned on all sides. Place in an 8x8 baking dish. Bake in a 375 degree F oven for 15 minutes, or until internal temperature reaches 145 degrees.

While meatballs are frying, heat 4 qts water in a pot on high heat. Add egg noodles and cook 8 minutes. Drain and rinse in cold water to stop cooking. Return to warm sauce pot off heat. Mix rest of noodle ingredients in and set aside.

At same time, melt butter in a non stick pan over medium low heat. Add in flour and mix well. Cook for 6 to 8 minutes until flour starts to smell nutty. Slowly add in beef broth. Mix in well. Mix in rest of gravy ingredients. Bring to a simmer. Turn heat to low and simmer until rest of dinner is ready.

Plate noodles. Top with 2 meatballs. Drizzle gravy over top. Garnish with more fresh parsley, grated parmesan, and lemon juice if desired. Serve immediately. Enjoy.
Tips
If you prefer, make meatballs smaller. I prefer them larger.
If gravy becomes too thick while simmering, add a couple tbs milk or cream to thin out texture.
