Fresh Cod in Tomato Sauce

Cut the cod into bite-sized pieces as you like.

Dredge the cod pieces in dry flour, shake off any excess, and fry them. Set aside.

In a skillet, add a few tablespoons of olive oil and sauté the chopped onion and garlic. Add salt. Once softened, add the tomato sauce and stir. Cook for about 30 seconds, then remove from heat. Pour the contents of the skillet into a blender cup. Add the cup of water and blend until smooth.

Return the sauce to the skillet and add the reserved cod pieces. Cook over low heat for three minutes.

Serve and enjoy.
