📌 I made this chilla using only jowar flour, which is why it didn't hold a perfectly round shape. If you prefer a round shape, you can add some gram flour (besan) or all-purpose flour (maida) to the batter.

Take the jowar flour in a bowl. Chop all the vegetables and keep them ready.

Mix all the vegetables into the jowar flour. Add salt, turmeric powder, chili powder, and fresh coriander, then mix well.

Add water as needed to prepare the batter for the chilla. Heat a tawa (griddle) over medium heat. Give the batter a good mix and spread it onto the tawa. Apply a little oil and cook both sides until golden brown, keeping the heat low. Prepare all the chillas in the same way.

Serve the hot chillas with your favorite chutney, tomato ketchup, or any pickle. I served mine with a mint, coriander, and raw mango chutney, along with a tangy, spicy raw mango pickle.
