Pesto Parmesan Crackers

Mix all the dry ingredients together. (Apart from the salt)

Melt the butter and add to the dry ingredients.

Add the Greek yoghurt and pesto and mix until combined. Add herbs if using.

Lay a sheet of baking paper out and roll out the dough to about the thickness of a pound coin.

Grind some sea salt on top of the rolled dough and gently press in with hands.

Lift onto the baking tray and make slight cuts into the dough each way to make little squares. Poke holes in the middle of each square with a fork.

Place into the oven at 190°C for 15 minutes.

Once cooked, leave to cool then snap into pieces and serve.
Tips
Cook in two separate batches for even crunchiness.
