Taco Spaghetti

Another week has come to an end and I was pretty excited when I woke up this morning, because for the first time in weeeeeeeeeeeks we have no plans in place this weekend, no one to see, no one to host, nothing! It's just the three of us - so we are going to lounge around at home, do some home projects and do the usual saturday veggie market in the morning and chill! So looking forward to it!
I made this dish a while ago and it was a hit with my 2 year old who loves mince and any kind of noodles/pasta dish! the Mr. loves Tortilla chips and salsa, so this was a combo of favourites. It is easy to make, and you should have most of the ingredients at home, so give it a try and let me know if you do!

Saute the onions in some heated oil in a pan. Add the mince and cook till the meat is brown. Drain the fat, add the water and the taco seasoning

After a couple of minutes, toss the cooked pasta, corn, olives, half of the shredded cheddar and the salsa. Give it a quick toss and cook on medium heat till most of the water is absorbed

Transfer to a baking dish, cover with some foil and stick it in the oven for another 20minutes. Once done, remove from the oven and sprinkle the rest of the cheese

I served this with some lettuce, tomato, avocados, tortilla chips and a dollop of sour cream
