Jalebi Batter

Mix the flour, corn starch, yeast, saffron and food colouring together.

Add the warm water to the dry mixture and whisk well making sure the batter is lump free and smooth.

Set batter aside in a warm place for 10-15 minutes.

Do not over ferment the batter.

Add the oil and mix well.

Sugar Syrup

Boil the sugar and water together in a pan.

Once the sugar dissolves and bubbles, turn the heat down and let it bubble gently.

In 10-12 minutes you should get a single thread syrup.

For Frying

Heat the oil in a flat frying pan.

Fill the Jalebi batter into a piping bag and squeeze the Jalebi batter out into the medium hot oil.

Fry the Jalebis until golden color on both sides.

Once fried, dip the jalebis into the sugar syrup.

Soak them for a couple of seconds and take out.

Serve hot.
