A twist from classic cold ones-This one is to be served warm... best for cold winter evenings... warm gooey jam topped pudding.. YUMMMMMM :)
Steps

Mix the flour and the baking powder and keep aside.

Beat the butter and sugar together well.

Add the eggs one by one and beat well till all is mixed well and sugar is dissolved.

Add the vanilla essence and mix well.

Add the flour mixture into the above wet ingredients. and mix it well with either a wooden spoon or with electric mixer at low speed (like how we do for cake batter!)

Now grease the pudding basin with butter and spread the jam on the bottom of the basin. (if the jam is too thick heat it a bit to loosen it so that it spreads nice and even!)

Pour the batter into the basin and double boil it for 1hr or till done. (do the skewer test to verify!). Or can use electric rice cooker if you have one - pour water in the main vessel and put the pudding basin and switch it on... :) easy!! ;)

Once done de-mold and serve warm!! :) enjoy it on a cold evening!! :)
