Yogurt pancakes with cinnamon mango coulis and strawberries

This morning I had no milk in my fridge, so I decided to twist a bit a pancake recipe to make it work with greek yogurt instead. Sliced strawberries well complemented the mango coulis, adding a little bit of crunchiness to the plate. :)

  • 1 CupFlour
  • 2 TablespoonsSugar
  • 1/2 TeaspoonSalt
  • 2 Teaspoonsbaking powder
  • 2 TablespoonsUnsalted butter melted
  • 1Egg (large)
  • 4.5 OuncesGreek Yogurt plain
  • 1/4 CupWater
  • 1 TeaspoonVegetable oil
  • 1 CupMango chunks
  • 2 TablespoonsSugar
  • 1/2Lime
  • 1/4 TeaspoonCinnamon powder
  • 1/8 TeaspoonNutmeg powder
  • 1/4 CupWater

    In a small bowl whisk together flour, sugar, baking powder, and salt.

  2. 2

    In a medium bowl, whisk together greek yogurt, butter, and egg.

  3. 3

    Add dry ingredients and a little bit of water to egg mixture; whisk until just moistened (do not overmix!). The mix should be soft but not watery. (I put it in the fridge while cutting the mangoes, but it's up to you).

  4. 4

    Heat a small pan on medium-low and start preparing the coulis by putting in all the ingredients above.

  5. 5

    Give them a quick mix and let it cook while you're preparing the pancakes, mixing it from time to time. It will be ready in 10 minutes, when mangoes will be easily crushed and it will get a jam consistency.

  6. 6

    Heat a large skillet (nonstick or cast-iron) over medium. Put some oil in it and rub with a sheet of paper towel.

  7. 7

    For each pancake, spoon 2 to 3 tablespoons of batter onto skillet forming a nice round. You can cook more than once at a time if they fit!

  8. 8

    Cook 1 to 2 minutes - until surface of pancakes have some bubbles and a few have burst. Flip it and cook until browned on the underside.

  9. 9

    As pancakes get ready, build a "tower" with them, putting some coulis and strawberry slices between each layer.

  10. 10

    Top the "tower" with some more coulis and strawberries and serve while warm. :)

Hello, Sir/madam..
1st time tried pancakes my ingredients
2 small Banana
1cup oats flour
1cup curd
1tsp honey
1/4tsp baking powder and
1/4teaspoon baking soda
Some water for the consistency but it was a loss I couldn't make it as it turned up to be sticky and didn't flip at all it was more like a scrambled sticky egg .. would like some tips how to make if better the batter of pancake can I add egg in it or should I add more of flour plz suggest as I don't want to waste a bit.. and top of it fells so stupid as not knowing the ABC of cooking plz plzz help!!!!!
