Khandvi

Its a gujrati dish made from gram flour. A bit of tricky and needs time for one to specialize in it. But at the same time, if you want your family to have something healty but tasty its an another option. Its made from very less amount of oil. Also it can be served to one allergic to gluten.

First take a bowl and mix together gram flour(besan), curd and water.

Add salt,mirchi powder,tumeric powder,ginger paste,hing powder and mix well.

Pour this batter into a pan(prefer pan that is deep and broad) and keep it on a high flame.Simmer the flame as the batter starts boiling.(I prefer cooking it on a simmer flame and later on higher flame.)

Sooner the batter becomes thick. Grease the back of plates with little of oil and spread a very small amount of batter to check the thickness. If you are able to easy roll the batter and it doesn't stick to plate its the right consistency. Else cook it for more minutes on high flame.

Now spread this batter equally on 3 plates and let it cool for 2 minutes.

Using a knife draw lines of the plates on which batter is spread and make the rolls of the cooked batter.

Place them on a plate.

Now in a another pan,take oil,mustard seeds,green chilies. As soon as the mustard seeds starts pooping, Turn the gas off. And pour it on the khandvi rolls.

Garnish it with coriander leaves. Khandvi is ready.
