Carrot -Vermicelli Payasam (kheer)

It was my hubby's birthday and i planned a surprise dinner for him while he is back from office. I prepared the menu a week ahead of his big day and listed the main course , side dishes and even decided to bake a cake for him. But when it comes to the dessert part i wanted to try something new and different from the usual "Semiya/Vermicelli Payasam" that i used to make whatever theoccasionis.. hehe.;)......And came up with this tasty recipe with a twist to the Simple Vermicelli Payasam. So on his birthday i baked a chocolate cake, and made chicken thai balls , Erachi Chooru , Green Chicken fry and the yummy carrot semiya payasam.
I have also made this several times after that for Eid, international food festival at hubby's office ,family get together and so on the list. Every time it was a huge success , that my family and friends loved it very much and keep on filling their empty glasses with this pale orange tasty goodness.
This payasam is made with the goodness of carrot , richness of milk and condensed milk, altogether gives a unique flavor,color and taste that it turned out as a wonderful treat!!! So make this at your home to give a special treat for your loved ones... :)

In a pressure cooker add diced carrot and some water, close the lid to cook them. Let it pressure cook for about 2 whistle, switch off and wait till all the pressure is released.

Cool the cooked carrots and transfer it to a mixer to make a puree(no need to add water, can add 1 or 2 tbsp milk to enhance the taste).

Cook the soaked sago in same water and keep it aside.

Heat a pan add some ghee, roast the nuts and grated carrot for a minute and keep it aside.

Heat another pan and roast the vermicelli in 1/2 tbspn ghee if not roasted and add some water to cook.

Add the milk to the cooked vermicelli and let it boil.

Add cooked sago, Sugar and Carrot puree and mix well

Now add the condensed milk and cook for few minutes.

Switch off the flame, add cardamom powder, roasted nuts and carrot.

Serve it hot or cold.
