Raw mangoes give the simple urad dal a wonderful twist. Its a sweet and sour dalThis Bengali classic is traditionally had in summer for lunch.

Peel and slice the mangoes into thick slices

The dal should be soaked in slight hot water for 1 hour.

In a pressure cooker boil the dal with sliced raw mango, salt, and the pinch of tumeric
- 4
On a hot pan, put in the oil and when it is nearly smoking put in the red chilli (remember to split the them), mustard and wait for it to pop. Cover it to prevent the seeds flying away.

Add the boiled dal with mango into the fried mustard and red chilli. Add water if it is too thick, add the sugar and let it boil once. In true Bengali style, the grains should be slightly firm and not squishy.

Serve hot with rice
