Tomato Spinach Pulao

It's been a while since we've had a proper Indian meal at home. I prefer cooking Indian when there isn't any agenda on... however the last few weeks have been insane, its been easier to cook non-indian meals. This past weekend, we didn't have much on the saturday, so in the morning we headed out to the farmers market, which is our weekly thing, and though I didn't have spinach on my shopping list, I grabbed it cause it looked so fresh and gorgeous .... On the way home from the market, I began thinking of a rice dish that could go well with my meat side dish that I had already decided to make ... First I thought of Tomato Rice (cause its been a few years since I have made that at home LOL) and then I remembered the spinach that was just bought, and I came home and quickly put together this lunch
This pulao recipe is easy and perfect when you don't have a lot of time on your hands. Also if you are one who is keen on rice recipes, you should so give this a shot!

Ingredients

  1. 1onion diced
  2. 2tomatoes chopped
  3. 1 tbspgarlic paste
  4. 1 tbspginger paste
  5. 1carrot grated
  6. 4 cupsspinach chopped (or frozen if not in season)
  7. 1 tbsptomato paste
  8. 1 tbspcoriander powder
  9. 1 tspcumin seeds
  10. 2 tspschilly powder
  11. 1 tbspGhee Oil or (clarified butter)
  12. to tasteSalt
  13. 3 cupswhite rice cooked

Steps

  1. 1

    First up, wash the rice, and cook in a pot of water or a pressure cooker or an electric rice cooker. I went with the rice cooker. My measurement was 3 cups of rice to 6 cups of water

  2. 2

    Heat the oil in a pan, and saute the onions along with the garlic and ginger pastes. Once the onions have softened, add the chopped tomatoes and continue to cook till the tomatoes have mushed up a bit

  3. 3

    Next add the seasoning: the cumin seeds, coriander and chilly powder. Also add the tomato paste. Give it all a good mix and allow it to cook for 2-3mins

  4. 4

    Add the spinach and the carrot. Put a lid on the pan, and allow it to cook for about 10mins or until the veggies have cooked through and is soft

  5. 5

    Season with salt, and slowly add the cooked rice. Gently fold the rice in to the veggie mixture. Transfer to a serving bowl, and garnish with roasted nuts or some freshly chopped coriander leaves

  6. 6

    I served this rice with a meat side dish and some raita
