Jackfruits are abundant in Kerala during the summer season.It is a very delicious fruit
with amazing benefits for the health . It is not only rich in minerals and vitamins but a power house of energy.. Above all , the sugar in jackfruit reduces the glycemic index .All my family members love the different dishes prepared with jackfruit .Last week I included jackfruit payasam as a part of my Birthday celebration..Vow..it was really appreciated by all our friends who tried it.

Cooking Instructions

Coook 2 cups of sliced jackfruits in one cup of water for about 10 minutes.Take out,cool, blend it and keep aside.Take the sarkara(molasses) and boil it in one cup of water,till it is dissolved.Sieve the syrup.and keep aside. Fry the cashews and kismiss in ghee and keep aside.

Now mix the molasses syrup with the jackfruit pulp and cook for 20 minutes in a thick bottomed pan,continuously stirring.Add the dairy milk simultaneously,followed by the cashews and kismiss with the balance of ghee,stirring.When the whole contents have been fully mixed, Add the coconut milk followed by the spices powder.Mix every thing fully well.Add a very small pinch of salt followed by quarter teaspoon of vanilla essence.Take out from fire Delicious payasam is ready. You can serve...

So usually in the winter, I like to make English Style steamed puddings. But my son-in-law brought something new to me over, a 25 pound jackfruit. I love this fruit, but had an over abundance of fruit. So I figured, why not a steamed pudding. Searching turned up nothing, so took a couple other recipes, and came up with this recipe. After eating the first one, and it was so good, I made a second one, which I recorded here. Now here is where it gets weird. A mistake was made, that turned out really nice. I accidentally used parmesan seasoned bread crumbs instead of regular bread crumbs. Yes, weird, but it gave it a slight change that turned out wonderful. Think of the difference between a regular caramel, and a salted caramel, almost the same, but a slight difference that just adds that little something extra. If it's too weird for you, use regular bread crumbs. It is still exceptional. No I have not tried canned jackfruit. A steamed pudding is super dense and moist. It is best served with a sauce, like hard sauce or custard sauce. But whipped cream is nice, some like a sprinkle of powdered sugar. Fo Fa -

The major ingredient used over is from my parents garden, the jackfruit, coconut and banana leaves. This is one of traditional recipes from Kerala that is not commonly made nowadays due to fast life and no time.
