Date and Walnut Cake {Eggless}

I wanted to make something sweet today; with a full tin of condensed milk in the fridge I zeroed in on an egg-less cake. I had made a chocolate egg-less cake before; but this time around I wanted to try something with dry fruits and nuts as I had just replenished my stock at home.
After giving it some thought and searching through my recipe book collection, I came across an age old Nita Mehta’s cook book; it’s a small rectangular book which I had picked up for Rs.29 many years ago.  I decided to go for the dates and walnut cake as I liked the simplicity of the recipe along with the fact that it is a ‘dump all ingredients in one bowl’ kind of a cake which makes cleaning up after so much easier!
The cake came out perfect, it’s filled (literally) with chopped dates and the pairing with walnuts is just perfect. It’s a soft, slightly gooey cake which goes perfectly well with tea, coffee or even with a scoop of ice- cream especially in this heat.
Do try the recipe if you love dates and walnuts!

Ingredients

  1. 250 gramsDates /2 cups of Seedless
  2. 1/2 cupWalnuts roasted and chopped
  3. 85 gramsAll-purpose flour (maida) - approx. 3/4th cups
  4. 1/2 tinCondensed Milk (I used Milkmaid) - approx.197 ml
  5. 60 mlunsalted butter - approx.4 tbsps
  6. 2 tbspsWater
  7. 1 tspBaking Powder
  8. 1/2 tspBaking Soda

Steps

  1. 1

    Take a large bowl, sieve the APF, baking powder and baking soda in the bowl, mix the flours together with a whisk and set aside.

    Chop the dates finely, take a non-stick pan or a heavy bottom pan add the dates along with two table spoons of water. Cook the dates for 2 minutes just till the dates start to caramalise. Set aside to cool completely (20-25 minutes)

    In another pan, roast the walnut and chop them into chunks, let them cool completely.

    Add the dates and walnuts to the flour bowl and mix well, and then add the melted unsalted butter along with the condensed milk. Mix well till all the ingredients are well incorporated.

    Grease a 7 inch square pan, pour the batter in the pan and bake for 30-35 minutes @ 170 degrees celsius.

    Cool completely and serve with a hot cuppa or a large scoop vanilla ice cream.
