Mint Coriander Parathas

A must try Paratha for Mint Lovers! The flavor and taste of this Paratha stays with you for a long looong time.. It tastes delicious with Chutney or Raita.
This recipe is divided in to two steps. Firstly we knead the dough for Pudina paratha, and secondly the filling of the Paratha.
In this recipe we will use a Chaat masala mix which is used for the filling of the Paratha. For the full recipe of Chaat masala mix as well as Paratha filling please check Mint Paratha recipe.

Steps

For the dough add both flours, oil, salt and warm water. Mix and then knead into a smooth and soft. Add more water if required while kneading. Cover and keep the dough aside for 30 minutes.

Make 8 portions of the dough and roll in to balls. Flatten and dust with some flour.

With a rolling pin take the dough ball and roll it into 5-6 inch circular chapati.

Now in the middle, sprinkle the spice mix as well as some fresh chopped coriander leaves. Pleat the Paratha in a circle as shown in below picture. Then twist the end of the pleat in the middle and press down to flatten Paratha.

Again with a rolling pin take the dough ball and roll it into 5-6 inch circular chapati.

Heat a pan medium hot and place the paratha. You will soon see the paratha puffing up from the base at some places. Flip the paratha, spread some ghee or oil.

Flip again when the second side is about ½ cooked. You will see brown spots now and spread some ghee or oil on this side now. Flip again a couple of times till you see more brown spots and the paratha is cooked evenly. Continue with the rest of the dough.

Delicious hot Mint Coriander Paratha is ready to serve! Serve Paratha with Chicken Tikka, Mint Chutney and pickle.
