This is my mom's stir-fried cabbage with tomato, a dish I often ate growing up. Since moving away from home, I've tried to recreate it myself. It's a simple dish, but making and eating it always brings back memories of home.

This is my mom's stir-fried cabbage with tomato, a dish I often ate growing up. Since moving away from home, I've tried to recreate it myself. It's a simple dish, but making and eating it always brings back memories of home.

Slice the cabbage into long pieces. Rinse well and drain.

Cut the tomato into wedges. Chop the white part of the green onions finely, and cut the green part into 1-inch (about 3 cm) pieces. Mince the ginger.

Heat a pan and add a small piece of butter or 1 tablespoon of cooking oil. Once the butter melts, add the white part of the green onions. When fragrant, add the tomato and stir-fry with 1/2 teaspoon salt. Next, add the cabbage and stir-fry. When the cabbage is just starting to soften, season with another 1/2 teaspoon salt or 1 teaspoon seasoning powder.

Stir the cabbage and tomato together for about 1 more minute, then add the green onion tops and ginger. Stir briefly. I like the cabbage to stay crisp, not too soft. Taste and add a little fish sauce if needed.
