I bake, I love bread and luckily I have tried many many many recipes and different types of making breads. This one sounds a little special but it is maybe one of the most simple recipes I do. You need to buy "Fresh Bakers Yeast" its easy to find on the www and normally comes frozen as a 500 gr block. Just cut up and put into plastic bags and use as you need it. Really worth buying. I paid £5.50 for 500 Gr which is enough for about enough for 40 Loaves or 13p each - wait till you try it - the bread is amazing and again easy to slice and freeze and use a needed. - ENJOY :P

Steps

10 mins hands on and 2 hours Prove 30 mins bake
  1. 1

In the Bowl of your stand mixer add the water mix in the sugar to dissolve (Perfect temp is 35c, under 20 will not activate and over 50c will kill the yeast.) Then break in the yeast and mix together. Cover and leave to activate for 10 mins. You should start to see small bubbles raise to the surface and a wonderful yeasty smell.

  2. 2

Add the Oil and salt and mix with dough hook on slow to combine. Add the first cup of flour and combine - mine always fizzes as the yeast has so many bubbles now. Repeat with rest of flour until last cup. Add in 1/4 cup increments once the flour starts to come away from sides that is enough. Today mine was 5.5 Cups.

  3. 3

Knead on full for 6-7 mins. You should have a clean bowl and a slightly sticky dough. Spray some oil into a large bowl and turn out the Dough cover with the spray oil and cover with Teatowel. Prove for 1 hour or until doubled in size.

  4. 4

Get 2 9x5" bread tins and spray with Oil. Knock back the Dough and weigh. Mine was 1200gr exactly today divide into 2 equal parts and roll into a nice round log. Put into Tin (Mine are silicone but metal work just as well). Cover with Teatowel and let rise again for about 40-50 mins.

  5. 5

Preheat oven to 175C and then add the bread, bake for 25-30 mins until top is golden brown. Then remove and brush with the melted butter. Allow to cool. Believe me the smell of fresh baked bread using bakers yeast is truly AMAZING - Enjoy :P
