Cut the onion and beef into large pieces, about 2 inches. Peel and cut the potatoes into bite-sized pieces.

Heat a pan over medium heat. Add the coconut milk and Massaman curry paste, and cook until the oil starts to separate. Add the onion and palm sugar.

Once the curry paste is fragrant and the oil has separated, add the beef and stir-fry. Add the potatoes, then pour in the broth. Simmer for 30 minutes.

Transfer the curry to an oven-safe dish, cover with aluminum foil, and bake for 2-3 hours until the beef is tender.

When serving, top with peanuts or cashews and fried shallots. Serve with steamed rice. Delicious!
