Prepare the sugar syrup as usual and let it cool. Remove the crusts from the bread (save them for another use) and break the bread into small pieces by hand, then process in a food processor.

Rub the bread crumbs with butter and shortening using your fingertips, then add the rose water. Mix well and add the food coloring.

Line a cupcake pan with cupcake liners. Add 2 tablespoons of the bread mixture to each liner and press down firmly. Add the cheese filling on top.

Add another layer of the bread mixture over the filling and press down very well. Refrigerate for 1 hour.

Bake in the middle rack of a preheated oven at 400°F (200°C) for 10 minutes, then broil the tops until golden brown.

Remove from the oven and pour the cooled sugar syrup over the cupcakes. Let them sit for 15 minutes, then turn them out and garnish with pistachios.
