Steps

Bring smoker to 250.

Peel the membrane off the back of the ribs so they will fall off the bone.

Use secret spice recipe and rub it into the meat.

Cook for four hours.

At 3 hours, check the ribs by grabbing them with two sets of tong and bending slightly. If they break, wrap them in foil and continue cooking.

At 4 hours check ribs like above. If they fall off the bone, they are ready.
