This was my simple diner tonight... Its simple indeed but it took me a short time to prepare and the result is a well balanced diet.

This was my simple diner tonight... Its simple indeed but it took me a short time to prepare and the result is a well balanced diet.

Break 2 eggs in a bowl. Add salt to taste and beat the eggs.

In a skillet, put in 1 tbsp of oil and add the diced onions

Fry until slightly brown then add in the tomatoes. Stir. This should be for about 3-6 minutes

Then add the beaten eggs. Stir continuously. This will go on until lumps start to form.

Stir for 3 more minutes.,at this point every part of the eggs should havev already formed lumps. This indicates the egg is ready.

Remove from heat and start cooking your kale.

In another pan, put oil and fry the diced onions.

Add the chopped tomatoes.

Stir until soft and add the shredded kale.

Stir until the kale reduces in size.

Then add salt. Continue stirring for 6 minutes add a little water if need be.

Then serve when soft and ready.
