Hungarian meat filled crepes. I have a few Hungarian friends I met working with. Someone on the site here suggested I check out a few recipes from Hungary. So I asked my friends. Ingredients

60 minutes
6-10 servings
  1. Meat filling/ pörkölt/ stew
  2. 1-1/3 poundground beef
  3. 2 tablespoonsextra Virgin olive oil
  4. 1/4 cupchopped onion
  5. 1/4 tablespoonCaraway seeds
  6. 1/2 cupsour cream
  7. 3medium sized tomatoes
  8. 1 cupwater
  9. 4 teaspoonpaprika
  10. 2 tablespoonparsley flakes
  11. to tastesalt
  12. to tasteground black pepper
  13. crepes---------
  14. 4large eggs
  15. 1-1/2 cupmilk
  16. 1-1/2 cupflour
  17. sauce---------
  18. 4 tablespoonsflour
  19. 1 cupsour cream
  20. boiling water---------
  21. as neededwater to skin the tomatoes

Steps

60 minutes

    Preheat oven 350 degrees Fahrenheit

  2. 2

    Boil the water and add tomatoes

    Peel the tomatoes

    Dice the tomatoes into small pieces.

    Cook the meat filling adding all the ingredients listed in the filling group above.

    Drain the juices from the pörkölt/ stew after its done. Make sure the onions are tender and meat is browned. The tomatoes should be cooked down well. Use a sieve to drain the pörkölt.

    Save the juices for the sauce.

    Mix the eggs, milk, and flour to make a batter.

    Heat a nonstick pan and coat with oil enough to coat bottom

  10. 10

    Pour in about 1/4 cup batter and quickly tilt the pan to coat with a thin circle of batter. When the top begins to dry, flip to cook the other side. Cook until the bottom begins to turn golden, about 1 minute.

    Repeat till all the batter is cooked

    Mix the cup of sour cream 4 tablespoon flour with the pörkölt juices. Blend till smooth.

    To the crepes add the meat filling to be divided evenly in each one.

    Fold the sides inwards and roll like a wrap/ burrito.

    Put into a baking dish sprayed with nonstick. As you roll them.

    Pour your sauce over the top of all the palacsinta/ meat filled crepes

    Bake in oven 15-20 minutes. Serve immediately with a dollop of sour cream.
