My mom used to love this recipe and would want me to make it for her from time to time. It's been three years since she passed and I haven't made it since until now.

Ingredients

  1. 1 poundbulk sausage (I use jimmy dean)
  2. 1 cupchopped onions
  3. 1/3 cupchopped green pepper
  4. 2 Tablespoonsflour
  5. 1 (6 oz.)can tomatoe paste
  6. 1 t.Salt
  7. 1 t.Chilli powder
  8. 1/8 t.Pepper
  9. 4 oz.Cheddar cheese cut into 1-2 inch cubes
  10. 1/2 c.Sliced pitted ripe olives
  11. 2-8 oz.Packages of jiffy corn muffin mix

Cooking Instructions

  1. 1

    Preheat oven to 400 degrees. Cook sausage onions and peppers in a skillet until sausage is brown and crumbly. Stir in flour. Mix in next 4 ingredients. Remove from heat, stir in cheese and olives. Spread evenly in a 9 inch square pan. Mix muffin mix according to package directions spread over sausage mixture, let bake 35-40 minutes. Let stand 5 minutes. Loosen sides and invert on plate. Enjoy
