Slice the ham and smoked pork into strips. Cut the chicken into pieces as you like. Chop the onion and garlic into small pieces. If using canned shrimp, drain them; if using fresh shrimp, boil them for about one minute in hot water.

Bring about 3 cups of water to a boil and cook the bean sprouts for 1–2 minutes, then remove and drain them. Place the other ingredients in a large skillet and gradually add the pre-cooked unsalted rice. Add a little of each ingredient at a time, along with some oil and soy sauce each time, until all ingredients are well mixed.

Taste and if it needs more salt, add more and mix well. This rice should be light in color; don't make it too dark, as the color comes from the soy sauce.
