Moroccan Couscous with Chicken

Place the diced onions, chicken, oil, spices, chopped tomatoes, cilantro, carrots, and chickpeas in a pot. Sauté briefly, then add water and let it cook.

For the couscous, add a little salt, some oil, and a bit of water. Let it absorb slightly, then place it in a couscous steamer. If you don't have one, use a fine mesh strainer over a pot and cover so the couscous steams over the food. Wait a bit, then remove the couscous, sprinkle with a little more water, let it absorb, and return it to the pot.

While the couscous is absorbing the water, add the potatoes, zucchini, and bouillon cube to the pot with the chicken. Then place the couscous back over the pot, cover, and let everything finish cooking.

To serve, place the couscous on a platter. Strain the vegetables and meat, pour some broth over the couscous, arrange the vegetables and meat on top, and serve hot.
