Perfect for getting kids to eat more vegetables, and great for breakfast, lunch, or dinner since they’re packed with protein and veggies.

Heat a little olive oil in a skillet. Add the cabbage, carrot, bell pepper, leek, garlic powder, salt, and pepper. Cook for a few minutes until the vegetables are soft. Remove from heat, let cool slightly, then add the broccoli.

Add the ham and cheeses to the vegetable mixture.

Stir in the beaten eggs and mix well.

Spoon the mixture into a greased muffin tin. Bake in a preheated oven at 350°F (180°C) for 25 to 30 minutes.

Remove from the oven and let cool before taking the muffins out of the tin.
