Ingredients

4-6 servings
  1. cooked corn cut from 3 full ears or
  2. 1 canniblet corn or
  3. 2 cupscooked frozen corn
  4. 4diced small multi color sweet peppers
  5. 1/2 cupdiced onion
  6. 6celery stalk leaf tops, chopped
  7. 1roma tomato chopped
  8. 1/2 stickbutter
  9. to tasteRCA or Tony's Creole seasoning
  10. chicken broth for moisture

Steps

  1. 1

    Combine onion, celery, and peppers in a skillet with a few shakes of creole seasoning, and chicken broth for saute liquid and cook till veggies soften

  2. 2

    Then add the corn, more creole seasoning and the butter, saute for about 10 minutes

  3. 3

    Add the chopped tomato and gently fold to warm the tomato slightly

  4. 4

    Serve and enjoy
