Steps

Cut the eggplants in pieces or slices and salt them.

Let them stand for 30 minutes and then rinse and strain them.

Fry the eggplants in the oil, using a frying pan. Remove them using a sifter ladle and using the same oil fry the peppers cut into cubes and the sausage cut into thick slices.

When they are golden brown, put all the ingredients in a baking tray.

Grate a tomato and add it to the baking tray with the rest of the ingredients, season with salt and pepper, add the sugar and stir.

Finish off by covering the food with the rest of the tomatoes, cut into slices.

Bake for half an hour at 200 degrees and serve with rice or french fries.
