Using two forks, flake the mackerel fillets by pulling the meat with one fork and holding in place with the other

Grab the handful of rocket and place it onto your plate. Drizzle with balsamic vinegar and lightly toss it in your hands.

Scatter the majority of both the sliced tomatoes and pomegranate seeds over the rocket, leaving some behind for decoration

Spoon the mackerel on top of this into the centre of the plate
- 5
Sprinkle the remaining tomatoes and pomegranate seeds onto the mackerel
- 6
Finish off with salt and pepper, to your taste, and a drizzle of olive oil
