Ingredients

12-14 servings
  • Roast and Broth--------
  • 4 poundpork shoulder roast
  • 1 teaspooncelery salt
  • 1 tablespoonseasoned salt
  • 3 quartswater
  • 1/2 teaspoonground white pepper
  • 1 teaspoongranulated garlic powder
  • 1 teaspoonground sage
  • Dumplings----------
  • 2 cupself-rising flour
  • 3 tablespoonlard
  • 2 tablespoonssoft butter
  • 1/2 teaspoonseasoned salt
  • 1/4 teaspoongranulated garlic powder
  • 1/3 teaspoonground sage
  • 2large eggs beaten
  • 1 cupevaporated milk
  • Thickener--------
  • 2 tablespoonsmelted butter
  • 1/4 cupself-rising flour
  • Topping--------
  • 1/4 cupparsley flakes

Steps

  1. 1

    Mix all the ingredients of the dumplings.

    Knead and form a ball. Set aside covered in plastic wrap.

    Cut the pork into bite sized pieces. Start browning the pork.

    Season with the seasonings and brown in a pot.

    Add water. Boil 25 minutes covered.

    Form small balls of the dumpling doughball.

    Drop into the broth.

    Gently stir so as to not break the dumplings. Let them cook till dumplings are done.

  9. 9

    Here is an option. Keep a thin broth or thicken it.

    If thin keep it as is.

  11. 11

    If thicker add the 1/4 cup flour with the melted butter. Pour paste into the broth and stir till thickened.
