Ingredients

2 servings
  • 2chicken breasts, cooked
  • 1x 400g tin chickpeas
  • 2tomatoes
  • 1/4cucumber
  • 2 stickscelery
  • 1small avocado
  • For the dressing:
  • 1lime, zested and juiced
  • Small handful finely chopped fresh mint
  • 3 tbspolive oil
  • 2 tspagave syrup

Steps

  1. 1

    Chop the cucumber, avocado, celery, tomatoes, drain and rinse the chickpeas and toss together

  2. 2

    Chop up your cooked chicken breasts and add to the salad

  3. 3

    Combine the dressing ingredients and mix well

  4. 4

    Add in to the salad, toss together and serve
