Eel, treat it into boiled water, clean bone, blood and Internal organs, cut into stripes, drop and dry the water.

Oil into pot, ginger pieces. when oil hot enough, put eels into pot. keep frying and fliping.

1min later, put wine into pot.

1min later add soy sauce and sugar, depends on your like, you can try to taste before put.

Add water and small fire to boil it 10 mins, turn big fire until water steamed out, keep quick flip. done.

Put noodles into boiled water for 8 min. add some eel sauce, add vegetables. done.
