preheat oven to 400°F
- 2
slice tomatillos into quarters. chop jalepenos and cloves of garlic and add all to baking dish. drizzle with olive oil, salt and pepper. put into the oven, covered.

remove from oven after about 40 minutes or when tomatillos are toasted.

add all ingredients to blender or food processor. blend until smooth.

We took a trip to Cabo San Lucas for our honeymoon 5 years ago and a restaurant had this salsa that I loved. When we got home I kept trying to replicate it. It took some time but I think I finally mastered it. I used to boil the tomatillos to soften them but roasting them added flavor and made it that much better. Jeff
