Ingredients

3eggs
3ripe plantain
2fresh tomatoes
Salt
1/2 teaspoonCurry
Pinchdry pepper
1/4 kgGroundnut oil

Steps

Peel and slice plantain.sprinkle salt on it.

Heat up frying pan and pour in groundnut oil.

Onces is hot add the plantain fry till is brown.and bring it down when is ok.

Break egg in a bowl,whisk very well,and salt to taste.

Take 2 teaspoon from the oil to the frying pan heat up.

And pour in tomatoes and onion.stir and fry for 1min.add curry.

Pour in the eggs don't turn till is fully formed.just the other side to fry.

Neatly serve in a plate and enjoy.
