Indian style veggies Pasta
Steps

PREPARATION -- Cook the pasta in salted water, drain and keep it aside OR cook pasta simultaneously so that you can drain the pasta and add it immediately into the sauce.

PREPARATION -- Make a puree of tomato + garlic. [you can blanch{ boil for 1 minutes} the tomato,peel the skin and then puree it]

Heat oil in a pan,add the onions and saute till translucent.

Add all the finely chopped veggies and fry for 1 minute.

Add the tomato puree and fry till oil separates.

Add red chilli powder + turmeric + coriander powder + salt and fry till raw smell leaves.

Add 1/2 cup water and let it boil.

Once it start boiling,add the cooked pasta and toss well.

Simmer and cook for 2 minutes till the pasta gets completely coated with the masala and water evaporates.

Add the ketchup and give a stir. Off the flame and garnish with coriander leaves.

Ready to serve..Indian style veggies pasta.

Note - you can add as many veggies you want and according to your liking.
