Marinated Green Beans with Tomatoes & Olives

Ingredients

  1. 2 lbfresh green beans trimmed
  2. 1 1/2 tspsalt, divided
  3. 2garlic cloves, minced
  4. 1/4 cupolive oil
  5. 1 cupkalamanta olives, sliced
  6. 2tomatoes, seeded & chopped
  7. 2 tbspred wine vinegar
  8. 1 tbspfresh oregano, finely chopped
  9. 1/4 tsppepper
  10. 24 oz. packages, crumbled feta cheese

Cooking Instructions

    Place beans in boiling water seasoned with 1 teaspoon of salt. Cook 6-8 minutes or until crisp-tender. Drain, then plunge beans in ice cold water to stop the cooking proceess. Place in a shallow serving dish.

    Cook garlic in hot oil over medium heat for 30 seconds or just until fragrant, remove from heat. Stir in loives, next 4 ingredients, and remaining 1/2 teaspoon of salt. Pour mixture over beans, tossing to coat.Chill at least 3 hours, or over night. Sprinkle with feta cheese, garnish if desired.
