I love the pretty color and shape of cherry tomatoes. I wanted to eat lots, so I made this cherry tomato marinade.

The marinade is a little acidic, but when you add the tomatoes, it doesn't taste so acidic. If you don't like the acidity, reduce the amount of lemon juice or add a bit more sugar. Recipe by Komomomomo

2 servings

15Cherry tomatoes
1 tbspVinegar
1 tbspLemon juice (or concentrate)
1 tbspOlive oil
1/2 tspSugar
1/4 tspSalt
1 dashPepper

Steps

Mix all the ingredients except for the tomatoes for the marinade.

Halve the tomatoes.

Mix the tomatoes and marinade, chill in the fridge and it's done!
