The stuffing for peppers is basically the same as that for tomatoes... but in peppers, oregano and salted anchovies are omitted... we should use red and yellow peppers and not green because they are not sweet enough... a really good stuffed vegetable!

Ingredients

  • 700 gramsred and yellow peppers
  • 5 tbspextra virgin olive oil
  • 3 tbspchopped flat-leaf parsley
  • 2garlic cloves, finely chopped
  • 1 tbspcapers, rinsed and chopped
  • 1/2 smalldried chilli, chopped
  • 2salted anchovies, boned, rinsed and chopped
  • 5 tbspdried white breadcrumbs
  • 1salt and freshly ground black pepper

Steps

  1. 1

    Heat the oven to 180°C.

    Cut the peppers into quarters and remove the cores, ribs and seeds. Heat 4 tbsp of the oil in a large frying pan until very hot and then add the pepper, skin side down. Sprinkle with salt and pepper and cook for about 10 minutes, shaking the pan occasionally.

    Mix together the remaining ingredients in a bowl.

    When the peppers are just soft, place them in an oiled baking dish, cut side up. Pour the juice from the pan into the breadcrumb mixture and mix well. Taste and check the seasoning.

    Place a small mound of stuffing into each peace, drizzle with the remaining oil and bake for 15 minutes.

    Serves 4. Serves hot and enjoy!
