Easy fish and vegetable

Easy but extremely tasty and healthy fish and vegetable dish. I often cook this when we have buffet style party. The slow cook method in oven produces the lovely juice from mushroom which is full of umami flavour and make the whole dish very tasty.

Easy but extremely tasty and healthy fish and vegetable dish. I often cook this when we have buffet style party. The slow cook method in oven produces the lovely juice from mushroom which is full of umami flavour and make the whole dish very tasty.

Steps

Cut fish into chunks, coat with flour and lightly fry in oil.

Slice onion finely and spread over fish. Season with salt and pepper.

Grate carrots and spread over onion. Season with salt and pepper.
- 4
Slice mushrooms and spread over carrots. Season with salt and pepper.
- 5
Put a lid and cook on medium heat for 5 minutes or so. There should be juice from mushrooms. Reduce the heat and cook further 5 minutes.

If you cook large amount, lightly cook each ingredients and transfer to an oven dish. Cover and slow cook in a oven at 150C for 1.5 to 2 hours.
