Italian Easter Lamb

This recipe was inspired by the cooking show Two Fat Italians. This is 2 old Italian fellas who travel around Italy sampling the dishes, this is a very traditional dish they had in a monastery, it looked delicious so I thought I would have a go, it's not exact, but I tried to remember as much as I could of it!

California Farm Stuffed Leg of Lamb California Farm Stuffed Leg of Lamb
This is the authentic recipe of Michael Psilakis, Greek-American Chef. He taught me to make garlic confit. We self-butcher Dorper Meat Lambs in winter and freeze. Our lambs are big, a butterflied front leg is 3 pounds, the shoulder two pounds, enough for ten. The bones are used to make stew.I have included an easy way to butterfly your leg of lamb, all you need is a fork and steak knife. The meat tastes better when roasted whole. If it is too much food for one dinner, I roast ten minutes less, cut off the unused portions to freeze, then finish roasting. It freezes and reheats very well if meat is cut in one inch thick steaks. The leg makes 12 steaks of one inch thick, half a pound each, with stuffing.Warning.: this recipe overcooks very easily, from medium rare to well done in minutes. Use a probe thermometer. Take meat out of the oven to rest, it will continue cooking for 15 minutes. Enjoy.#GlobalApron Hobby Horseman -

Irish Lamb Stew Irish Lamb Stew
This recipe is from Hubby's paternal 'Nana' (grandmother). We spoke on the phone twice before Hubby and I were wed and off to Germany. She was pure Irish, lilting accent and all. She gave me this recipe on our second phone call. I was so grateful and asked what I could give her. Her answer, a great-granddaughter! All the great-grandkids were boys and she longed for a girl. Sadly she passed away while we were in Germany... and sadder still we only have a son. I wish we could have met... I bet she would have had endless stories to tell! This has become our traditional Samhain dinner and a remembrance of Nana. This recipe is very different from others, which have carrots and potatoes. I asked Nana about the missing root veggies and she stated that it is meant to be served with Colcannon, a mashed potato and cabbage or kale dish, so didn't need them. Lamb - Osso Buco Style Lamb - Osso Buco Style
This delicious northern Italian style meal is very easy to prepare. It's slow-cooked in the oven with a “hint of mint” in a vegetable sauce which compliments the meat. When served, it rivals most restaurant dinner plates. It's my signature dish. Serve with polenta, wide flat noodles, or along-side a portion of Italian risotto (recipe is published). Buon Appetito! Grilled Rack of Lamb Grilled Rack of Lamb
I made an easy variation of a recipe that I learnt in a cooking class.Cook the meat to whatever doneness you like. The times I have stated will cook the meat as in the photo, with the meat in the middle only slightly cooked. When cooking in the frying pan, cook on a low heat to get a crispy surface. Don't cook the sides!! Recipe by yucco0205 cookpad.japan -
