preheat oven at 325ºC

seive together all the dry ingredients
- 3
whisk eggs until fluffy. add the canola oil, whisk. add the honey and whisk.

add the mashed banana to the egg mixture and mix well.
- 5
add the desiccated coconut, mix well.
- 6
add the egg mixture to the centre of the flour and mix until all the ingredients are incorporated.
- 7
fold on the coconut cream and raisins.
- 8
pour into a loaf pan, bake for 50 minutes or until an inserted toothpick comes out clean.

This tea loaf really reminds me of the Xmas cake; it has the same dense and fruity citrusy intense flavors. Anyway, to make life easier, I am using a high quality dried fruit mix. Be sure they are high quality; always read the ingredients list. If you see any chemicals which you can't even pronounce, it is best not to buy it. Or you can simply google them if they are indeed harmful.The hardest part after baking is to allow the tea loaf to be cooled, unmolded and stored. It does tastes better after 24 hrs. I kept it wrapped and outta sight so I wouldnt be tempted to slice and eat, cos I know once I start, I can't stop. These are usually served with butter spread with a cup of tea on the side. I usually make banana bread with baking powder, but this time I wanted to try making it with a bread starter. I did it! This is such a moist banana bread.For the bread starter I use a 1:1 ratio of starter liquid to flour, fed 3 times over 3 days.I switched up Step 1 and Step 2. At first, I put in tea leaves as they were, but they lost their aroma and the texture was not good. So I tried with ground tea leaves.Be sure to grind the tea leaves. By doing so, it improves the aroma and texture. You can start with a refreshing morning by the sweetness of fruits and the nice flavour of tea.Use a teabag without using a stapler. It's dangerous to microwave metallic objects. Just in case, take the paper label out.If you add the maple syrup to warmed milk, it will dissolve easily, and prevent the egg from hardening with the heat. For 1 serving (400 ml silicone steamer).
