Rinse the pork chops and pat dry. Use a meat tenderizer to pound and soften the meat.

Marinate the pork: Finely mince 2 shallots and 1 clove of garlic. Add 1 tablespoon soy sauce, 1/2 tablespoon fish sauce, 1 tablespoon honey, and 1 tablespoon vegetable oil. Mix well and coat the pork with the marinade.

Wrap the marinated pork in plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor.

Remove the pork from the fridge and place on a baking sheet lined with foil. Bake at 400°F (200°C) for about 40 minutes, turning the meat and baking for another 10 minutes until done.

To make the dipping sauce: Combine 1/2 cup water (120 ml), 1/4 cup fish sauce (60 ml), and 1 tablespoon sugar in a saucepan. Bring to a boil for 2 minutes. Add minced garlic and chili peppers to taste.

Cut the banh hoi into shorter pieces and roll into bite-sized bundles. Finely chop scallions and sauté briefly in a little oil, then drizzle over the banh hoi for aroma and color.

Slice the pork into bite-sized pieces and serve with assorted fresh herbs. Enjoy your banh hoi with grilled pork chops!
