I couldn't find my old recipe for this and was in a hurry so I threw this tasty little dish together. It's a great way to use up both cooked chicken and that half eaten bag of tortilla chips!

So good!! This is something we made in my family many times while I was growing up. Over the years I have tweaked it a little.

My family loves enchiladas i use to roll each one fry and smother stuffed with chicken it use to twice as long so i decided to stack everything and it was delicious and less time consuming for all moms and wifes time is precious so cut back on cooking and it still taste great enjoy

Great garnishes included salsa, sour cream, black olives, and mild peppers.

I came up with it one day while unexpected guest Came to dinner and i did not have enough White Sauce enchiladas for everyone

This is my go-to recipe. I love this recipe because it's easy, I can use whatever vegetables I have, and when I feel like something Mexican I'll make this. This recipe I have also converted into personal size enchiladas. I have this small rectangle glass dish that's a little smaller than a bread pan and I do the same recipe but just in smaller quantity. Instead of popping it in the oven I put it in the microwave for 3 minutes. So this can also be used for a very quick and fast weeknight dinner for one or two people.

This casserole defines “comfort food” for me! I usually make this recipe using leftover turkey after Thanksgiving, but you can easily use leftover rotisserie chicken breast and make it any time. It’s an easy recipe that your family or guests will enjoy. I use mild enchilada sauce, salsa, and chilies. You can ratchet up the heat levels to whatever you are comfortable with.

I wanted a recipe that was focused more on the white creamy side instead of the harsh red spicy side that is in normal enchillada casseroles. I played around with the recipe for a bit and found that this one was the one the everyone enjoyed the most.
